- 2 eggs
- 1 cup granulated sugar
- 1 teaspoon brewed earl grey tea
- 1 cup buttermilk
- 3/4 cup butter, melted
- 2 cups cake flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons loose Earl Grey tea leaves, softened
- 2 fresh peaches, peeled and chopped GLAZE:
- 1 1/2 cups powdered sugar
- 2–3 tablespoon brewed Earl Grey tea
- 1/4 teaspoon lemon extract
Cook It Like This:
- Preheat your oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper or flour.
- In a medium bowl, whisk together the 2 cups cake flour, 1 teaspoon baking powder, and 1/2 teaspoon salt. Set aside.
- In a large mixing bowl, whip together 2 eggs, 1 cup of sugar, and 1 teaspoon of brewed earl gray tea. until light and fluffy.
- slowly pour in 1 cup of buttermilk, then 3/4 cup of melted butter making sure its well combined. .
- Gently fold in the dry ingredients, don't worry about the flour being all the way incorporated, we don't want to overmix the batter.
- Fold in the 3 tablespoons of loose Earl Grey tea leaves and chopped peaches until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–55 minutes, or until a toothpick inserted into the center comes out slightly clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- For the glaze, whisk together the 1 1/2 cups of powdered sugar, 2-3 tablespoons brewed Earl Grey tea, and 1/4 teaspoon lemon extract until smooth. Drizzle over the cooled loaf cake and garnish with extra peaches, if desired.
