So when I heard all the buzz about Boo’s Burgers, I had to see for myself if these burgers were a knock out or a tap out. The pop-up scene in Houston has been *popping*, and Joseph "Boo" Boudreaux’s name has been whispered in foodie circles like a secret code. But I wasn’t about to let the hype sway me. I needed to taste it, experience it, and see if this smash burger was truly worthy of the rave reviews. And..well, lets just say…
As someone who knows a burger like the back of their hand, when I finally got to try Boo's smash burger, Nuggets…., I am still floating on cloud nine from the K.O. of flavor that knocked me off my feet. Hosted at The Plant Project in Montrose with Fofiecake, this burger was hands down the best smash burger I’ve ever had—no lie. And listen, I don’t say that lightly. I’ve had burgers that would rather crawl back on the grill than face me. But this one? This smash burger is *that* burger. No extra toppings, no sauce hacks, just pure burger bliss.
Boo isn’t playing around in these streets. And honey, he’s *really* in his bag now, especially after his most recent pop-up collab with Pudgy’s Fine Cookies. If you’re from Houston, you already know Pudgy’s—those Thick AF cookies have been rising for two years, starting out as their own pop-up! So when Boo teamed up with them, I knew it was going to be a flavor explosion, and let me tell you, it was every bit worth the inevitable food coma.
First, let’s get into the menu: Boo brought the goods with savory treats like the Everything Everywhere Cookie—a chive cream cheese delight, topped with everything bagel seasoning. Or the Dutch Baby Cookie, giving you a Dutch baby pancake moment with buttermilk syrup and Texas Roadhouse butter frosting (I can still taste it, y’all). And can we take a moment for the Hot Sausage Kolache? Southerners know what's up with that one. I’m still upset I didn’t get that bite of home, but who knows..maybe Mr. Boo himself will whip one or three up for me. A girl can dream right?!
But Boo didn’t stop at the food. No, no, he came through with the coffee, too! The Pudgy’s Iced Bonanza Brulee Latte had me questioning why I haven’t been drinking banana cookie-infused oat milk all my life. This latte, featuring 3 Keys Espresso, was topped with toasted marshmallow fluff—because why not? And the Underground Creamery Iced 3 C’s Latte was another winner, blending Oreo cookie-infused milk with coconut sugar caramel and more of that delicious 3 Keys Espresso. Both were top-notch, but that Bonanza Brulee? Baby, *it took the cake*. Or should I say cookie?
All in all, Boo’s burgers (and coffee) have officially made him a force to be reckoned with in Houston’s pop-up scene. Watch out, because I’ll be the first in line for whatever flavor punches he’s throwing out next!
