Citrus Cheesecake with Citrus Blueberry Cream Cheese Icing

Ingredients for Cheesecake:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup fresh citrus juice (lemon, lime, and/or orange)
- 1 tablespoon citrus zest (lemon, lime, and/or orange)
- 1 teaspoon vanilla extract
Ingredients for Blueberry Cream Cheese Icing:
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/4 cup blueberry preserves
- 1 tablespoon fresh citrus juice (lemon, lime, and/or orange)
- 1 teaspoon citrus zest (lemon, lime, and/or orange)
Instructions:
- Preheat oven to 350°F (175°C).
- In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in citrus juice, citrus zest, and vanilla extract.
- Pour cream cheese mixture over crust in the springform pan.
- Bake for 60-65 minutes or until the center is set and the edges are lightly browned.
- Remove from oven and let cool completely. Refrigerate for at least 4 hours before serving.
- For the icing, beat cream cheese and butter until smooth. Gradually add powdered sugar, blueberry preserves, citrus juice, and citrus zest, beating until creamy.
- Spread blueberry cream cheese icing over the top of the chilled cheesecake.
- Optional: garnish with additional citrus zest and fresh blueberries before serving.
