Citrus Cheesecake with Citrus Blueberry Cream Cheese Icing

Ingredients for Cheesecake:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh citrus juice (lemon, lime, and/or orange)
  • 1 tablespoon citrus zest (lemon, lime, and/or orange)
  • 1 teaspoon vanilla extract

Ingredients for Blueberry Cream Cheese Icing:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/4 cup blueberry preserves
  • 1 tablespoon fresh citrus juice (lemon, lime, and/or orange)
  • 1 teaspoon citrus zest (lemon, lime, and/or orange)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in citrus juice, citrus zest, and vanilla extract.
  4. Pour cream cheese mixture over crust in the springform pan.
  5. Bake for 60-65 minutes or until the center is set and the edges are lightly browned.
  6. Remove from oven and let cool completely. Refrigerate for at least 4 hours before serving.
  7. For the icing, beat cream cheese and butter until smooth. Gradually add powdered sugar, blueberry preserves, citrus juice, and citrus zest, beating until creamy.
  8. Spread blueberry cream cheese icing over the top of the chilled cheesecake.
  9. Optional: garnish with additional citrus zest and fresh blueberries before serving.
